Ingredients:

3 c. all-purpose flour

3 tbsp. malted milk powder

1 1/2 tsp. Kosher salt

2 1/4 tsp. active dry yeast

3 tbsp. whole-grain mustard

oil

1 c. water

1 1/2 tsp. water

1 tbsp. baking soda

1 large egg yolk

* shredded orange Cheddar, sesame seeds, coarse salt, caraway seeds – optional toppings

Preparation:

  1. Put the flour, malted milk powder, and kosher salt in one bowl and whisk it all using an electric mixer. Then make sure you make a well in the center of the mixture.
  2. Warm 1 cup of water in a microwave to 105°F-110°F for about 30 seconds. Pour the heated water in the well in flour mixture, adding yeast on the top to stir it in gently. Leave it for about 5 minutes, until it gets frothy.
  3. Next, add the mustard and use the mixer on a medium-low speed to get dough (1-2 minutes). In case the dough is too sticky, add more flour, one tablespoon at a time. Then, put the dough on a lightly floured surface to knead it for about 3 minutes.
  4. Take a separate bowl to coat it with oil, and put the dough in it. Then turn the oiled side up and cover the bowl. Leave the dough in a warm place and wait for it to double in size (around 50 minutes).
  5. Heat the oven to 375°F, and line two baking sheets with parchment paper. Take a large pot, fill two-thirds of it with water, and leave it to simmer.
  6. When the dough has doubled in size, take it out on a lightly floured surface. First, punch it down, and then cut it into 12 equal pieces. Roll each piece into a 1/2-inch-thick rope with your hands lightly floured, too.
  7. Take one rope at a time and make a U shape. Then, use the ends of it to cross them over one another and twist them. Press ends onto the bottom of the U, place the ropes on the baking sheet, and cover with a towel.
  8. Going back to the simmering water, put the baking soda in it and stir before you start putting 3-4 pretzels at a time into the water and keep them in there for 1 minute. Place the pretzels top-side down first, then turn them over, and keep them in there for another minute. When ready, take the pretzels out using a spatula, and place them on the baking sheet.
  9. Beat the egg yolk with the 1 1/2 teaspoons water in a separate bowl. Use the mixture to brush the pretzels with it, adding cheese, coarse salt, or some other topping.
  10. Bake for 30 to 35 minutes, until the pretzels are golden brown.
