Ingredients

FOR PEPPERONI & CHEESE PIZZADILLAS

  2. 8 (6-inch) flour tortillas (you can also use whole wheat tortillas)
  3. 2 cups pizza sauce, divided
  4. 2 cups fancy-shredded part-skim mozzarella cheese, divided
  5. 2 teaspoons dried oregano, divided
  6. 1/2 cup pepperoni minis, divided

FOR CAPRESE PIZZADILLAS[/b]

  1. butter for pan
  2. 8 (6-inch) flour tortillas (you can also use whole wheat tortillas)
  3. 2 cups fancy-shredded part-skim mozzarella cheese,
  4. 2 cups halved cherry tomatoes,
  5. 8 fresh basil leaves, cut into ribbons,

Instructions:

PEPPERONI & CHEESE PIZZADILLAS

Use the iron skillet that you set over medium heat.

Put a tablespoon of butter in the skillet to melt.

After the butter has melted, place the tortillas in the skillet

Drop 1/8 of pizza sauce on the top of each tortilla

Place the toppings on flour tortillas; pour some cheese, cover it all with oregano and pepperoni

Put a tortilla on skillet, so that the toppings are facing upwards

Cook it all for about 30 seconds or until cheese starts melting

Fold one side of the tortilla in toward the center, followed by the other side

Leave it in the skillet for a bit longer than flip it over and continue with cooking until it gets light brown.

Transfer the tortilla from skillet to plate with a paper towel on the top

Pour more butter if needed while cooking the rest

Serve instantly

CAPRESE PIZZADILLAS

Similar to the above;

Put a tablespoon of butter in a skillet to melt.

Arrange the tortillas.

Place the toppings on flour tortillas; add cheese, halved tomatoes, and ribbons of basil.

Put a tortilla on skillet, so that the toppings are facing upwards

Cook it all for about 30 seconds or until cheese starts melting

Fold one side of the tortilla in toward the center, followed by the other side

Leave it in the skillet for a bit longer than flip it over and continue with cooking until it gets light brown.

Transfer the tortilla from skillet to plate with a paper towel on the top

Pour more butter if needed while cooking the rest

The tortillas you cooked cut into wedges.

Serve instantly.
