16Loaded Nachos

We bet you cannot imagine Super Bowl without nachos, right? To make them, you’ll need the following:
Ingredients:
2 tsp. olive oil
3/4 lb. fresh chorizo, casings removed
2 cloves garlic, chopped
1 small onion, chopped
10 oz. sharp Cheddar or pepper Jack cheese, grated (about 2.5 cups)
1/2 small head iceberg lettuce, shredded
1 (15-ounce) can Black Beans, rinsed
1 avocado, chopped
8 oz. Tortilla chips
3/4 c. Fresh salsa
fresh cilantro
pickled jalapenos
sour cream
Preparation:
- Heat the oven to 400°F and line one baking sheet with parchment paper.
- Heat oil in a skillet and add chorizo, garlic, and onion. Cook for 6-8 minutes, and then put the beans, too, and wait for another 2-4 minutes, until warm.
- Place chips in the pan and spoon the chorizo and bean mixture over them, adding cheese on top.
- Bake for 10-12 minutes, until the chips are toasted and the cheese is melted. When done, add lettuce, salsa, avocado, cilantro, jalapeños, or sour cream.
