Ingredients:
12 potato skin shells
3/4 cup Monterey jack cheese shredded (or Mozzarella)
1 1/2 cups bourbon blue cheese sauce
2-3 strips bacon cooked and chopped (optional)
1-2 green onions sliced, for garnish (optional)
1/3 cup blue cheese crumbles for garnish (optional)
sour cream (for serving)
Preparation:
- Heat the oven to 350°F and prepare potato skin shells.
- Put the potato skin shells on a large cookie sheet (skin side down).
- Fill the shells with blue cheese sauce one at a time (make sure the sauce is thick enough), then put Monterey jack cheese on top of each shell, and then sprinkle with the bacon.
- Bake for 12-15 minutes (wait for the cheese to melt). Once done, use the paper towel to dab the skins if too greasy. Add more blue cheese crumbles and green onions (optional).
