Here’s another tasty snack, especially for those of you who love this southern delicacy. To prepare the chicken, you’ll need the following ingredients:

4 c. cornflakes, lightly crushed

1/4 c. buttermilk

1 lb. boneless, skinless chicken breasts, trimmed and cut into 2″ piece

1 tsp. no-salt blackening seasoning

kosher salt

Preparation:

  1. First, heat the oven to 400°F and line one baking sheet with nonstick foil.
  2. Put the cornflakes in one bowl. Use another one to whisk buttermilk, ¼ teaspoon salt, and the blackening seasoning, and then toss the chicken.
  3. Coat the chicken with the cornflakes, and then place it on the baking sheet.
  4. Bake 15-20 minutes.

As for the waffles, here are the necessary ingredients:

3/4 c. all-purpose flour

1 1/2 tsp. baking powder

2 large eggs, separated

1 3/4 c. buttermilk

1 tbsp. finely chopped dill

1 tsp. baking soda

1/4 tsp. salt

Preparation:

  1. Put the flour, baking powder, baking soda, and salt in one bowl and whisk it all together.
  2. Beat 2 egg whites (but reserve the yolk). Use an electric mixer to whisk it for 2-3 minutes (wait for the stiff peaks to appear).
  3. Put the 2 egg yolks together with buttermilk and whisk them together. Then, add the flour mixture.
  4. Fold in the whites gently, waiting for all the streaks to disappear. Add the dill.
  5. Take spoonfuls of batter (preferably 2 tablespoons each) and put them in the waffle iron. Wait for the waffles to become golden brown.

Once everything’s ready, use waffles, chicken, lettuce, apples, and honey to form sandwiches.
